This paper consists of five chapters.The first chapter is summarize.In the first chapter, the concept of the development at home and abroad,the relevant literature about origin characteristics,the necessity of the research about characteristic of honey and the study in this paper.In the second chapter, the content of Potassium, Calcium, Sodium, Magnesium, Copper, Zinc, Iron, Manganese, Chromium, Cadmium, lead and Phosphonium in different varieties honey were determined and analysed with Wet digestion-atomic absorption spectrometry and 721 spectrophotometer. and the introduction of characteristic factor, the proportion of curves to make a number of element content distribution, It is found that there is significant difference in some elements of honey, and the difference of some other elements is not significant. It can provide science foundation to evaluate the production area and to identify the characteristic for honey.In the third chapter, Two different infrared spectroscopy are used to determine different varieties of honey , characteristic peaks in IR fingerprint spectr are identified and comparative analysis. The results showed that there are some differences between absorption frequency and relative intensity in different varieties of honey .In the fourth chapter, Fructose, sucrose and reducing sugars in different varieties honey were determined by 721 spectrophotometer . the ratio chart to find different content to reach different types of plants, climate, honey bees and take time on sugar content in honey has a great influence.In the fifth chapter, Attempts to create fingerprint of the different varieties of honey by gas chromatography, fingerprinting analysis of the spectra to identify differences, so as to identify the origin and provide the basis for honey.
