Objective:Armillariella mellea,a symbiotic fungi of Gastrodia, whose fermentation product had a sedative, anticonvulsant, hypoxia tolerance and enhanced immune function similar to the pharmacological activity of Gastrodia.In order to better utilize the resources,the optimum medium for solid fermentation of Armillariella mellea were studied.And then the fermentation beverage and regulating action on the mice were studied.Methods:5 different solid mediums were used for culturing Armillariella mellea. And then developed the fermentation into beverages,The optimal formulas of the Armillariella mellea beverages were determined through orthogonal test and sensory evaluation, the model of immunosuppression was produced by cyclophosphamide(CY) modeling method.Meanwhile the total number of colonies was measured. And the effects of Armillaria drinks on intestinal microflora were analyzed.Results:The optimal medium composition is:1.5% sugar powder,80% rice powder, 1% soybean powder,10% wheat bran powder and 7.5% sweet potato powder. The optimal formulas of the beverages were as follows:30% of the fermentation broth of Armillaria,15g/L white sugar,0.6g/L citric acid,0.2g/L xanthan gum.The component of beverages were:polysaccharide 0.049g/L, reducing sugar 15.42g/L. protein 0.053g/L, amino acids 1.226g/L;Armillaria drinks could significantly enhanced immune function,including promoting the development of spleen and thymus, spleen and thymus index. Meanwhile it could also promote the growth of beneficial flora, Conclusion:Armillaria drinks enhanced not only immune function but also bowel function, maintaining and promoting the health of the body. Armillaria drinks did not produce any toxic effects on mice.It was safe to drink.
