Xi'an Hui ethnic group's Halal Food (food made according to Islamic tenet) and Beverage Industry (HFBI) has a unique local characteristic during its development. Currently it has become the main industry to the local ethnic group. It can provide not only a better understanding of its historical path but also a valuable theory as well as a pragmatic guidance to the industry that studying its history, present and future thoroughly.Although the HFBI has its usual business behavior, the unique cultural characteristic of it is a key aspect for its economic growth. This has become even more evident nowadays. Therefore, this thesis examines the current condition of HFBI from a national economic prospective by comprehensively adopting the theories and methodologies of ethnology, anthropology, history, economics, and sociology, paying particular attention to factors restraining its future development. The thesis focuses on the impact of religious, historical, cultural, and sociological factors on the progress of it.Chapter one of the theses introduces the history and the present status of Xi'an Hui ethnic group's HFBI, emphasizing on its three development periods and its root after the foundation of the People's Republic of China. Chapter two mainly describes the current condition of it through a detailed survey. The author uses HFBI in Xi'an's downtown area as the primary study subject to observe its change comprehensively through Field Work and to do real diagnosis analysis by selecting representative cases of it. Chapter three analyzes it's cultural and social capital theoretically in order to sum up the modernity transformation theory of it. Chapter four concentrates on the practice of the modernity transformation theory. Xi'an's ethnic group's HFBI should realize the increment of enterprise cultural capital through innovation of corporate culture from micro perspective, utilize the middle layer social capital of enterprise and form industry advantages through macroscopic social capital in order to proceed with modernity transformation. Following the above countermeasures the study brings up three relationships that the enterprises need to observe during the transformation.After the above four parts of analyses, the paper draws the following conclusions:first, culture is the key factor that influences the development of the Hui ethnic group's HFBI. The integration between doctrine of Islam and Chinese Confucianism formed Hui Muslims' economic thoughts and institutions. They are the endogenous impetus of it. Second, the entrepreneur is the most important cultural capital of it. The accumulation and investment of cultural capital towards his own enterprise affect the appreciation speed of cultural capital, and thus, determine the development of enterprises. Third, the material and technical capital play an important role to the successful management of enterprise. However, the system capital is even more important than the above two. Therefore, the continuous investment of cultural capital and efficient use of material capital, human capital and system capital are the sufficient conditions for the success of enterprise. The last but not the least, the change of social network is the exogenous factor for the development of the HFBI. The effective use of social capital from multilevel is the necessary condition for the success of the HFBI.
