Chinese food is an important part of Chinese civilization history.As China is one of the four countries with ancient civilization,it is also known as "country of cooking". This fully demonstrated China's highly civilized diet.Chinese cuisine consists of the famous Lu,Sichuan,Guangdong,Jiangsu cuisine four branches.Shandong cuisine is one of them which represent the northern style.The Yellow River and the Yellow Sea in Shandong is an abundant resource of food supplies.The bright working people have created rich and colorful diet,including Jinan and Jiaodong local flavor.And as core of Lu cuisine,Jinan dish is famous for its unique characteristics.In the diversified Chinese food cultural circle,Jinan food culture is a distinctive and relatively independent subsystem.As political,economic and cultural center of Shandong Province,and with its intelligent and industrious people,Jinan has formed a specific regional food culture based on its given natural environment and human society in the middle Shandong area.Jinan cuisine mainly has the following notable features:First,the widespread use of raw materials;Second,superb and varied cooking skill;Third,soup dish is a major feature;Fourth,diversified and colorful flavoring means;Fifth,affected by Confucius theory" One does not object to the finest food",Jinan cuisine is delicately produced, emphasizing cutting skill,level of cooking,seasoning,putting strict requirements on color,aroma,taste and shape of the dish;sixth,in addition to formal dinner dishes, Jinan has a variety of local snacks which is rich in breed,finely made and with varied flavor.Seventh,Jinan has the feature of dining customs.Through a long course of development,Jinan dish has reached as much as several thousand species,plus flavor snacks,the quantity is enormous.Jinan food culture is the essence of talentod culinary workers of all generations,it is an integral part of splendid Chinese civilization.A side water and soil raises a side people.While the Jinan cuisine with rich Lu style changing and developing in the long river of history,it is also bringing special character and personality to the Jinan people.The grand,delicate,and elegant manner of Jinan cuisine had generated the integrity,benevolent and conservative traits of Jinan people.As the representative of Lu cuisine,Jinan food is always most distinctive in above aspects.But it is easy to see that,with development of the society,the influx of Sichuan Cuisine,Guangdong cuisine,Huaiyang has intensified the market competition,Jinan cuisine is gradually revealing some weakness under the pressure. For example,the Guangzhou dish is smooth and tender,the Chengdu dish is hot, "a dish a style,a hundred dishes,a hundred flavors",compared to them Jinan dish is relying too much on cooking and oil,keeping only fresh and salty taste without many changes.Furthermore,due to reasons such as simplistic and arbitrary choices of dish containers,insufficient public advertisement and promotion,Jinan cuisine is in a disadvantaged position in the food market competition today.Therefore,how to save Jinan cuisine out of the present situation,and how to stimulate life and vigor out of the maintenance of traditions and creation of new fashion is also important topics for this paper to discuss.
