The food is what matters to the people. Restaurant industry as a pillar of China's tertiary industry in China, it's said that Dining is the King of all the industries. Xiang dishes are important carrier of Hunan Culture, with the rapid development of Xiang dishes industry, they have became one of the pillars of Changsha's economic. The names of the Xiang dishes restaurant in Changsha, expressing the characteristic of naming, reflecting the civilization of language. The study of these names is following the tendency of linguistics. The names not only are the miniature of the Changsha Dining Culture, but also reflect the characteristic of the city. So this study is of certain social and culture value. Though the names are very different seemingly, but we can find the hidden law by In-depth study.In this thesis, the writer have used the methods of survey and statistics, and done a comprehensive analysis on phonetics, words and phrases, rhetoric and so on. Then the writer made a further explain of the culture and psychology reflected by the name, and reveal the law, the principle and the development trend of the Xiang dishes names.The thesis can be divided into the following sections:Chapter 1 Introduction:a brief introduction to the present situation of the research, research values, research contents and methods.Chapter 2:The analysis of phonetics. This part analyzed the syllable, tonal pattern, alliteration and assonance, reduplicated word of the names.Chapter 3:The analysis of words and phrases. This part showed the situation of using words of generic names, development of generic names, high frequency words of specific names.Chapter 4:The analysis of rhetoric. This part analyzed many different rhetorical devices that used in naming.Chapter 5:The analysis of naming type. This part showed the six types and 17 elements that constitute names.Chapter 6:The analysis of culture factors. This part gave a cultural and psychological analysis of the naming.Chapter 7:The principle and standard of naming. This part offered some reference way about principle and skills to naming.Conclusion:Summary of the main points of the thesis. This part summarized the main results:in Chinese restaurant, there is a large number in four-syllable and five-syllable names. Available range of monosyllabic generic names is wider than the two-syllable generic names."appellation" and "geographical name" are always in front of "food", "food variety" and "cooking methods". "appellation", "geographical name", "food" and "food variety" is the most frequently used elements of choice and so on.
