Over the past two decades, the consumption demand of fish has undergone fundamental changes, not only for its fastest development among all the food consumption in China, but also for its distinct change in the internal category structure, which has brought remarkable impact on the structure of market and production structure of fish in China. However, few researches have quantitatively analyzed the determinants of demand for fish, especially demand for the category-specific fish products. Such research has not been made yet in China.The overall goal of this research is to explore the various factors that have impacts on the fish consumption and provide basis for the future fish demand projection and structural changes in aquatic production. In order to achieve this goal, this research will has the following four specific objectives: Understanding the level of fish consumption in China and possible factors that affect the fish consumption; Developing a systematical modeling frameworks and complete demand system for food and fish demand study; Exploring the consumption behavior of both urban and rural consumers in China by estimating model of fish demand system and model of food demand system respectively, analyzing influence of various factors on the demand for fish and other foods quantitatively; Discussing the future change of aggregate amount and the structure of fish demand based on the result of the research, so as to provide basis for decision making in fishery production structure changes and rational utilization of fishery resources.In order to analyze the impact of various factors on demand for fish and fish species, the three-phase models of demand systems have been developed, which are total Consumption Expenditure Model, Food Demand System Model and Fish SpeciesProducts Demand System Model. The system model uses Transcendental Logarithmic (TL) demand funtion forms. The income and expenditure of surveys data of 8,750 urban households by Urban Social Economy Investigation General Team of National Bureau of Statistics of China and the data of 81,167 rural households in 1997 and 2001 by Rural Social Economy Investigation General Team will be used to estimate the above models. Because the dependent variable in the models is the share of consumption of food, and the models are equation of demand system, therefore, Zellner s seemingly unrelated regression method is applied to estimate the models.The result of the research indicates that the main factors of determining the level and structure of food consumption in China are income, urbanization and the growth of market; these factors exert negative impact on the staple food consumption, but positive impact on non-staple food especially fish. Consequently, it is expected that in the food consumption, there will be a rapid growth in the non-staple food consumption especially the fish, and the growth of staple food consumption will be reduced; with the impacts of these factors, the structure of future demand for fish will change distinctly with the increase of total amount: shrimp products will increase rather fast and the extent of increase in sea-water fish will be greater than that of freshwater fish.In summary of this study's findings, the research puts forward the following relevant policy recommendations: The development strategy of sea-water fish should be transformed from capturing-oriented policy to that of cultivating-oriented; As sea-water fishing "zero policy", the development of freshwater fishery should be transformed from production growth to quality improvement; Increase aquatic technology to provide technical assurance for adjustment of fishery production structure...
