A Analysis Of Vinegar Process In Jincheng Village

Shanxi province is famous for "two black and two white". The “twoblack" refers to vinegar and coal; the " two white" is noodle and wine.Among them, vinegar is one of the golden card of Shanxi. People inShanxi is addicted to vinegar, and it is known to all the country. Beforethe establishment of new China, vinegar in Shanxi is almost homemade,so the spread of vinegar in Shanxi is wide and has a long history. Vinegarmaking craft in different areas of Shanxi process not only the long historyand complicated steps, what’s more significant is the formation of thecraft characteristics, which is different from the other areas.In order tounderstand the uniqueness of vinegar making craft in Jincheng City ofShanxi province, this paper chooses Miao Village in Zezhou as theinvestigation field, in the basis of collecting literature material andunderstanding the general situation of the field, and with theanthropological fieldwork method of participatory observation toconsiderate the craft steps, craft characteristics and cultural significanceof the selected field. On this premise, sums up the anthropological andtechnological characteristics of vinegar making craft of this field that isalso the representative of the area in Jincheng City of Shanxi. In addition,through the analysis of production environment and economic benefit, itconfirms again that vinegar making craft of the people in Shanxi isclosely related to the environment. Through the researches of vinegarmaking craft in Miao Village, the author finds that the key point of theprotection of traditional arts and crafts that is closely related to the life isto find the value of its own existence, but not just simply hard protection.
