In this paper,the newly harvested paddy purchased by Yanji Direct Bank in 2016 is taken as the object of study.Sample comparison analysis methods are used to compare the storage quality of paddy in three ways: conventional storage below 20°C,whole-reservoir circulation storage,the whole warehouse circulation combine gland storage.The nutritional quality,processing quality and micro-organisms of paddy are dectected during the storage,and further explore the best way for scientific and technological grain storage in the Northeast.The test results show that the whole-reservoir circulation combined with lid-balanced grain temperature-ventilated grain storage technology to store high-water paddy in the northeast region is the most scientific and rational,economic and environmental protection,safety and environmental protection.After a series of 180-day test and control warehouses were compared and analyzed,the results were as follows:(1)During the period of testing,the whole warehouse circulation combine gland storage technology is 25.8% lower than the conventional storage surface grain temperature,the overall storage grain temperature is low 15.4%,and the whole warehouse circulation combine gland storage technology utilizes the cold source in the northeast,adopts fan circulation,overall grain The method of stack pressure can effectively reduce the temperature of stored grain and ensure the quality of stored grain.(2)For the stored grain quality during the test period,the moisture content of the stored grain under the the whole warehouse circulation combine gland storage is 14.77%,which is 0.41% higher than that of the conventional storage.During the storage period,the entire chamber circulation combined with the lid storage technology is isolated by a gland,the water content of the stored grain is lost,and the water retention rate is high.The fatty acid value of the whole tank circulation combined with gland mode is 18.66 mg KOH/100 g,which is 4.86 mg KOH/100 g lower than the conventional storage,and the fatty acid value reduction rate in the whole tank circulation combined with gland mode slower,it can improve the storage quality of stored grain.(3)The nutritional quality of the stored grains during the testing period was as follows: With the prolonged storage time,the total protein content did not change much,the albumin content and the globulin content decreased,and the gliadin changes were very small.Compared with conventional storage,the whole warehouse circulation combine gland storage can delay the rate of protein degradation.During storage,the reducing sugar content of paddy showed a trend of rising first and then decreasing with the prolongation of storage time.The storage rate of conventional reducing sugars increased rapidly.The storage of the whole chamber combined with lid packing can inhibit the rate of reducing sugar content increase and ensure the nutritional quality.(4)During the storage of paddy,with the extension of storage time,the pasting characteristics of paddy generally showed a downward trend,and the peak viscosity and regenerative value of stored paddy increased.The whole bin circulation combined with lid storage can slow the rate of decrease of gelatinization characteristics.The gelatinization characteristics analysis results show that the paddy stored in the whole warehouse circulation combine gland storage has good processing stability.The germination rate is 94% under the combined conditions of the whole warehouse circulation combine gland storage,which can ensure the quality of seed use and enable the paddy to have good processing and seeding properties.(5)The microbial indicators of the stored grain during the testing period indicated that compared with conventional storage,the amount of mold in the whole warehouse circulation combine gland storage was significantly reduced,and the bacterial amount was slightly increased.For bacteria,the storage of grain with low temperature and high moisture content is more suitable for bacteria multiply.During the storage process,the overall microbial index changes with temperature and storage time,and the whole chamber circulation combined with lid storage can effectively inhibit the growth of mold.
