Corn nutrition value and health care function is the highest in the staple food, which eating more can prevent diseases and enhance physical fitness. Corn grits are widely used in industrial production, and as a raw material to produce a lot of corn products. Therefore, in order to improve the quality and cost of corn grits, the comparative subject of both Xianyu335and Fengliao was studied on peeling rate, corn flour rate, degermination rate, grits size distribution and granularity quality of corn grits, which are under different amount of adding water solution。Through a comparative analysis to select an optimal adding water solution point, so that the processing of corn grits can be more sophisticated, improve the quality of corn grits and extend the storage time. This paper demonstrated by comparing the following major conclusions:The effect of corn processing is the best when the amount of adding water is2.5%:grits of the peeling rate when the water content is2.5%rate is maximum, peeling effect is the best, which is the lowest ash content in grits; the endosperm during peeling and grinding produce the least corn flour, improving the yield of grits and economic benefits; degermination rate of corn grits when the water content is2.5%rate is the highest, which is that has the best effect. Experiment embryo are mainly complete the corn germ, so germ complete rate is higher and also the fat of grits in the lowest.Water content of3%is already maximum in half wet processing, so water added in test set range from0-3%is reasonable. Under three different impregnation plan of water in two varieties, the particle size of16W/12W,16W/30W,30W/-materials proportion is larger,-/8W and8W/12W material proportion is less. The moisture content of16W/30W and30W/-in corn products is higher. Fat content of various granularity grits in corn dry-processing were higher than semi-drying. The particle size of16W/12W,16W/30W,30W/-fat content is higher,-/8W and8W/12W fat content is low, and the fat of varieties materials did not make any difference. Ash content of large grits is the highest,12W/16W,16W/30W,30W/-in the ash content is reduced in turn.From what has been discussed above, when the adding water was2.5%, the proportion of coarse grits and fine grits production is higher, and the fat content and ash content are lower, while the moisture content of products is slightly higher, but still below the safety storage water of corn. So choosing water added of2.5%for the optimization of process design program is feasible. Designing the process of fine grits is based on the best amount water of2.5%, which also includes:cleaning, conditioning, peeling, degerming, grinding, sifting.
