Food producers are the main factor in prevention of using food additives. Thisstudy is based on a survey by Jiujiang Food and Drug Administration in JiangxiProvince. The survey, having88food enterprises as the research object, summarizesthe behavior features of using food additives by food enterprises in Jiujiang. Fromthe result of the survey, we can see that95.5%of the food processing enterprises usefood additives in food production.43.9%of the enterprises using food additives hasthe purpose of pursuiting product taste. The most frequently used food additives arespice (The using ratio is56.8%), sweeteners (The using ratio is50%) andpreservative (The using ratio is40.9%). In the purchasing process of food additives,34.1%of the food processing enterprises doesn’t take the quality of food additives asthe paramount consideration.70.2%of the food processing enterprises has neveranalysis the detection of food additives in their factory production.12.5%of thefood processing enterprises had food quality accident due to abusing food additives.65.9%of the food processing enterprises considers the lack of market moral as thereason of abusing food additives.53.4%of the food processing enterprises considersthe regulatory system which is not perfect as the main reason.39.8%of the foodprocessing enterprises considers the omissions of related food additive standards asthe main reason.Firstly, this paper carries on the case analysis. On this basis, the thesis put thefood production enterprise, food additive regulator and consumer factors into theanalysis system. Considering the research results in literature and the actual situation,the thesis proposes a set of hypotheses about the factors influencing the foodprocessing enterprises in the theoretical level of abusing food additives behavior.Then, on the basis of fuzzy set theory, the thesis uses the export group decisionmaking method of analysis of experiment to quantify the relationship between eachfactor and identify the key factor ultimately. The whole process of analysis showsthat the factors influencing the behavior of food processing enterprises in the abuseof food additives are associated with each other to form a complex system. The factors which have the highest center degrees are the economic benefits expected byfood processing enterprises (The center degress is11.1355), the social responsibilityof managers of the enterprises (The center degree is10.6943), the relevantgovernment deparment supervision (The center degree is10.0678), the sale scale offood processing enterprises (The center degree is9.9606) and consumer preference(The center degree is9.5777). Among them, the reason degree of the relevantgovernment department supervision, the sale scale of food processing enterprises andconsumer preference which have an active influence on other factors in the analysissystem are above zero. The social responsibility of managers of the enterprises andthe relevant government department supervision which are more influenced by otherfactors in the analysis system have reason degrees below zero. The above fivefactors are considered as the key factors which have an effect on abusing foodadditives by food processing enterprises.
