Canned foods are people’s favorite food for their nutrition, health, convenient to carry and tasty features, its security problem causes more and more attention. Canned food is also China’s major export products of the food industry, and export grows fast. They are our country’s first products entering the international market, the products’ quality and standard application has been moving closer to the international standards.The BRC(British Retail Consortium) and IFS(international food standards) standards are the GFSI(Global Food Safety Initiative) recommend standards of food safety system. There are four strongest credibility standards in the international retailers. Compared with other standards,the BRC and IFS standards comprehensively cover the retailers for the product quality requirements, which are widely accepted by the global retailers. The goods that conduct BRC and IFS certification are more easily to gain the retailers’ trust and favor in Europe and the United States. Under the background of the current food safety in China, the export of canned enterprise for the BRC and IFS certification can effectively improve product quality, reduce food safety risks, improve the brand image of enterprises and export capacity.The paper’s primary work is displayed as following:(1) The history, development, status, classification and criteria use of canned food are introduced, and the canned common security and quality problems are analyzed.(2) The global food safety standards and international standards are introduced, interpreted and compared. The content of the interpretation is as follows: standard version, certificate of grade, the certificate number and distribution, content and structure of the standard, 10 basic terms of BRC standard, 10 KO of IFS standard. Both standards are very good control tools for food safety and obtain the trust of retailers. The two standards are recognized by the most global retailers, and the BRC standard has higher recognition in the UK and US retailers, whereas the retailers from France, Germany and Italy prefer the IFS standard, for other canned enterprises select the single certification to provide reference.(3) The two standards were applied for Xiamen X canned food LTD. System requirements in the implementation process was analyzed. As the core parts of the two systems, food safety management system and food quality management were studied, and fresh fried sardines canned product was studied as a case.(4) The countermeasures were offered after the implementation of the system to solve thecommon problems in the canned production that previously mentioned. In the process of system implementation, the relative problems were analyzed, the proposals were put forward, and the relative management system was established and improved. The fresh fried sardines canned products’ quality, customer satisfaction, physical and chemical indicators were analyzed and compared between before and after the system establishment.On food quality and safety, BRC and IFS standards have very good control effect; they can reduce the product potential risk effectively. The research result and conclusion not only provides a reference for the enterprise renewal audit and other canned corporate audits, but also provides a reference for other food enterprises’ certification.
