Palm oil, a general term of oil, which squeezed from the oil palm, has a very broad marketable demand and prospects. As one of the grease resource-poor countries, our country needs to need to import large quantities of palm oil every year. Because of the lower price, palm oil is easy to dope into the high-quality edible oils. As a result, it is lack of effective protection for the safety and quality problems.Firstly, this paper has measured the grease conventional physical and chemical indicators with five palm oil came from different area, including acid value, iodine value, peroxide value. It started from distinguishing five different palm oil from each other with the conventional physical and chemical indicators, then analyzing the tongue taste sensor by modern electronic, after principal component analysis, discriminant factor analysis and similarity analysis for the strength of the response value of the sensor size, we verified electronic tongue can distinguish five different habitats palm oil more quickly and efficiently.Secondly, for testing the different degrees of palm oil doped into the camellia seed oil, we detected the physical and chemical indicators for the incorporation of0%,5%,10%,15%,20%,100%of the palm oil with traditional chemical methods, and then tested it with sensor the gustatory electronic tongue system produced from the French Alpha MOS.Based on principal component analysis, discriminating factors as well as the similarity method, the results show that the sensor identification reached87from the diagram of the principal component analysis made with selecting ZZ GA, It is able to identify clearly the different proportions of camellia seed oil doping.Finally, this paper distinguished and identified the olive oil mixed with palm oil by the electronic tongue. Let pure palm oil,25%,50%,75%and100%olive oil be the test object, the results show that:the electronic tongue can distinguish and identify different proportion of adulteration effectively, and the response value of the electronic tongue has a certain trends with the increasing of the proportion for the added. Through the quantitative analysis for optimizing the sensor with4items, principal component identification index to91,it proves that the electronic tongue works well for the distinction and recognition of adulterated grease.Because of the uncopyable and efficient features of the electronic tongue sensors, it has a broad application prospects in grease detection. How to collect grease sample information as complete as possible and be able to analyze the differential quality quickly and accurately will be the focus and difficulty for the research in the future.
