Oats,tartary buckwheats and millets,with high composite protein,dietary fiberhave health care to human body.Sausages have a delicious taste and high nutritionalvalue.In this study,three kinds of composite coarse cereal sausages were preparedand their shelf life prediction and storage characteristics were investaged.Moreover,their nutrition ingredients tested and values evaluated.Corn starch,ice water,cereals and pork lean/fat are main influencing factors tocomposite oat,millet and buckwheat sausages.The best recipes were determined,the results showed that,pork lean and fat equaling the sum of100,the optimalformulations of composite oat sausages were95/5pork lean/fat,8g oats,10g cornstarch and27g ice water;The optimal formulations of composite millet sausageswere95/5pork lean/fat,6g millets,4g corn starch and24g ice water;The optimalformulations of composite buckwheat sausages were80/20,pork lean/fat,10gbuckwheats,6g corn starch and18g ice water.Shelf-life of three kinds composite coarse cereal sausages were predicted bymodel (ASLT model) according to the principle of chemistry dynamics, and theirstorage characteristics were researched during their shelf-lifes.The results showedthat the shelf-life of composite oat sausages were21d under the room temperature(25℃),and116d under4℃;The shelf-life of composite millet sausages were11dunder25℃,and115under4℃;The shelf-life of composite buckwheat sausages were15d under25℃,and64d under4℃.Storage characteristics of composite oatsausages showed that acid value have been gradually rising phenomenon as thestorage time of growth,WHC declined,the water content presented rising trend, thetotal number of colonies rose, the starch of alpha coefficent is reduced.Storagecharacteristics of composite millet sausages showed that acid value rose as the storagetime of growth,WHC declined,the water content presented rising trend,the totalnumber of colonies rose, the starch of alpha coefficent is reduced. Storagecharacteristics of composite buckwheat sausages showed that L*value increasesgradually,a*and b*values decreased,TBARS value increased and the starch ofalpha coefficent is reduced.Oats,millets and tartary buckwheats and its composite sausages were made basicnutritional value evaluation,the results showed that: millets belonged to high qualityprotein.Composite oat sausages and composite buckwheat sausages were rich indietary fiber;Three kinds of composite coarse cereal sausages had high nutritional value for its calcium,iron,zinc and VB1....
