Jerusalem artichoke, also known as Sun choke, five-star grass, Latin name:Helianthus tuberosus L. is compositae, sunflower is perennial root herb. Native toNorth America, was introduced into Europe in the17th century, when introduced intoChina. Autumn flowering, long with a yellow small flower, like a chrysanthemum, theproduction of tuber propagation, is commonly used in the underground tubers are richin starch, inulin fructose, edible, cooking or congee, pickled pickles, bask in Jerusalemartichoke dry, or as a raw material for making starch and alcohol. The stems also canbe processed as feed.Its establishing favorable water into the tuber or leaf anddehumidification, heat cool blood, benefit stomach and of the effect. Housing nearplanting have beautification effect. Jerusalem artichoke is called "common crops in the21st century, human" by fao officials.Inulin also called synanthrin, its molecular structure is composed of manyfructose molecule polymerization. Inulin mainly exists in most plants in nature, it isalso found in the mold and bacteria. More and more people realize the special physicaland chemical properties and physical properties of inulin, and is widely applied to food,chemical industry, fodder, health care, etc. This study is aimed at Jerusalem artichokeinulin, raw materials from local cultivation of Jerusalem artichoke. Experiments ofJerusalem artichoke composition, extraction, purification and application of inulinlaunched a series of problems such as in-depth study to explore, for provide theoreticalbasis for the industrial production and application of inulin.Research of Jerusalem artichoke tuber composition: according to the detection ofJerusalem artichoke, finally it is concluded that fresh Jerusalem artichoke moisturecontent is78.6%, other material accounted for21.4%; Jerusalem artichoke powder was76.26%, total sugar content in protein content is9.02%, fat content is3.72%, the ashcontent is6.43%, crude fiber content is2.38%, reducing sugar content of1.19%.Selection of pretreatment of Jerusalem artichoke inulin and the exploration oftraditional preparation process: Through the test to get the hot ironing out the enzyme temperature is65℃, Jerusalem artichoke dry after pretreatment can be long-termpreservation. The inulin extracted the optimum conditions were determined fortemperature60℃,60min time, ratio of material to water25, according to the optimalconditions the validation test of inulin extraction yield of74.87%.Jerusalem artichoke inulin purification process of research: to crude extract ofinulin impurities adopted the lime milk-phosphoric acid method, the best processcondition was determined by the single factor experiment for pH11.0, temperature60℃, time of10min. The final treatment of inulin fluid more clarification, colorsignificantly lighter than before treatment, inulin loss rate under5%. After lime milk-phosphoric acid method and treatment of inulin thick liquid, through active carbondecoloring method processing. Through the single factor experiment, orthogonalexperiment was adopted to determine the best process conditions for activated carbondosage is2%, the temperature of50℃, action time40min. The decoloring treatmentto get more clarification of the inulin liquid color slightly gray, total sugar loss rateunder6%. On liquid column temperature is20℃, the velocity is8ml/min under thecondition of the three pillars of purified liquid method, ion exchange desalting effect isbetter, the ash content was0.98%, the light transmittance was97.4%, inulin loss rate isonly3.75%.The preparation of Jerusalem artichoke inulin health beer: this experiment fromthe application perspective of inulin, tried beer fermentation process, using inulin asauxiliary materials, a series of technological process to operate in accordance with thebeer brewing, after2weeks of fermentation, Jerusalem artichoke inulin beerfermentation completed finally. Beer through the testing of the indicators, theindicators meet the national standards. This kind of beer not only has a composite ofJerusalem artichoke and beer flavor, and the composition such as the Jerusalemartichoke inulin is contained in beer, is beneficial to people’s health, is a kind of verygood health wine.
