By choosing the wheat of Fusarium head blight harvest in Huanghuai areas during the2012summer,the first study focused on the effect of DON removal in the millingprocesses,then60Co-γray irradiation and ozone oxidation technology were applied to degradeDON in the scab wheats based on the good results of degradation of DON solution using thetwo methods above.Besides,the changes of samples quality were analyzed after thedetoxification.The main conclusions were as follows:(1) After milling to remove coarse bran and fine bran, DON was removed significantly,degradation rate of samples contaminated by the DON naturally at different levels over50%,and to verify the scab toxin from the wheat Grain external gradually inward to infect thisconclusion.(2)60Co-γray irradiation had good degradation effect on standard DON solution.Withincreased of irradiation dose,the degradation rate of DON rised rapidly.When the irradiationdose was10KGy,DON at a concentration of0.5μg/mL was almost completelydegraded.Degradation of low concentrations of DON solution was better than thehigh-concentration;The presence of water promoted the degradation of DON.(3) By using the60Co-γ ray irradiation, the DON in the scab wheats had degradation in acertain extent. Degradation rate of DON rised with the increased of irradiation dose, when theirradiation dose was10KGy, degradation rate of samples contaminated by DON over20%;Sample forms, the moisture of sample grains and the infection levels of samples had no effecton degradation rate of DON; The degradation rate of DON in the scab wheats can greatlyimprove by irradiated after soaked in water.(4) Low concentrations of ozone had strong degradation on the solution of DON, Using10mg/L ozone oxidized the1μg/mL of DON solution,the result showed that within30s thedegradation rate of DON reached93.63%.What’s more,the lower initial concentration,thegreater concentration of ozone, the longer of treatment time, the better degradation of DON.(5) The ozone was effective to reduce DON in scab wheats at a certain extent.The higherozone concentration, the better degradation of DON;The longer processing time, the higherdegradation rate of DON, the correlation between the time and degradation rate was y=-1.1926x2+11.427x-8.7787; In the process of ozone oxidation,with the moisture increasedof wheats, the rate of degradation of DON improved. (6) Only soaked the scab wheats in water can also reduced the DON content to a certainextent, and the the DON degradation rate increased with increasing soaking waterconsumption; Leaching by quantitative water also reduced the content of DON in scab wheats.Correlation existed between the times of leaching and DON degradation rate, polynomialfitting correlation equation was y=0.115x2+7.317x-8.495.(7) After60Co-γ irradiated by different doses, the internal structure of wheat had greatchanges, the content of damaged starch increased, the gluten strength gradually weakenedwith the irradiation dose increasing, Stirring force resistance of dough weakened, so variousinternal quality indicators were gradually worse; Every sample was treated with differentconcentrations of ozone for4h, starch pasting properties had no changes, the developmenttime and stability rised.In another words, the quality of the flour rised at this conditions ofozone treatment.
