Xinjiang, with a brilliant history of culinary culture, is famous for its"delicacies". The culinary culture of Xinjiang is marked with its special national flavor and unique native customs and lifestyles, two strengths that enable Xinjiang food to reach the rest of the country and go global. There appear vast economic and market potentials for the sustainable development of the food industry, thanks to the economical boom triggered by the reform and opening up, the steadily increasing income of the people and the vigorous growth of tourism and trade. The fast food market, among others, is thriving. With ten years'speedy development, local fast food industry has become the major force in maintaining the sound development of the food industry as a whole. Besides its current development, the fast food trade still has a huge potentiality yet to be tapped, so much so that economists claim that the fast food trade will become one of the biggest and the most attractive trades in the merchandise and service market in the 21st century.However, the fast food market in Xinjiang is cluttered with Western fast food chains, such as KFC, Dicos, which seem poised to outperform Xinjiang native popular meals. Therefore, Xinjiang native food, such as lagman, kebab, nan and pilaf are facing some trouble. In a word, the Western fast food industry develops at a high speed, while its Xinjiang counterpart does not have a promising future. There are gaps between Xinjiang native fast food business and the Western fast food industry.How to identify, reduce the gap and finally make Xinjiang fast food trade a modern one is a hot topic with theorists and entrepreneurs. In my opinion,the main differences between the Xinjiang fast food industry and the competition are as follows: 1. the outdated management concept. For example, there are outdated concepts with management and marketing in Xinjiang fast food industry. Xinjiang fast food trade should learn creatively from the competition the advanced management concept to set up better management, strengthen staff training, change the old-fashioned sales concept and promote the service quality. 2. the backward management modes. To the Xinjiang native fast food industry, there are many shortcomings in terms of its chain operation, standardization, and technology. It is urgent for local entrepreneurs to learn Western management modes. In short, Xinjiang fast food industry should set up chain operation and balance business size and profits. In addition, it is reasonable for local fast food businesses to realize its industrialization, paying attention to both standardization and diversification. Lastly, it is significant to research and work out food types, improve technology content and promote green food with balanced nutrition.Through the innovation of operation and management,we can narrow the gap between the Xinjiang and Western fast food industries, thereby regaining our market share and eventually establish our position in the international fast food market.
