Therefore, we must strengthen the meat products quality security and meat products processing enterprise supply security. It has more important meaning for protecting human life, health and promote human meat food trade and safeguarding world peace and development.Based on the viewpoint of supply chain management, this thesis analyses the source security from the reliability of each node enterprise in supply chain, builds pork supplier evaluation index system, and uses the AHP method to select pork supplier first. Secondly, based on the analysis of every cost elements of supply chain, the thesis establishes cost optimization model. At last, through the actual investigation of A company, combined with the problems in its supply, cost and safety, the thesis designs the source security system, cost management system and safety management system so that meat products processing enterprises at the core can control their internal production safety. At the same time, through the supply chain management to protect the meat products safety supply of upstream and downstream node enterprise in the production, distribution and other aspects. And it can solve the meat products supply source and quality security problems by choosing appropriate suppliers from the source, which is very important for guaranteeing the supply security of meat products processing enterprise.
