With the rising of people's living standards, people,s security needs for safety degree of meat products is increased dramatically. Faced with the uncertainty of external factors, especially to the recent several meat poisoning, which push the meat supply chain security issues to the air waves, meat safety has seriously disturbed people's lives and social stability. In order to monitor meat supply chain effectively, to analyze and manage risk factors of meat from the pig breeding to the end supermarket retail, to improve the meat supply chain security to ensure meat safety, based on systematic analysis process of meat production and distribution, this thesis used RFID (radio frequency identification) technology which can realize the advantages of multi-target recognition and moving targets identification, created meat supply chain model through the internet to realize the tracking and logistics management. And used HACCP (Hazard Analysis and Critical Control Points) system to analyze the model, to derive the critical control points which should be controlled by the manufacturers and dealers in the model, using the improved risk-depth analysis of safety assessment matrix, and realized the sorting order of by the important extent of critical control point; For more detailed studies, to find out the risk factors which influence the safety of meat supply circulation scientific and comprehensive, the author used qualitative analysis and quantitative fault tree to analyze the critical control points which calculated by Risk Matrix. From analysis conclusions, the critical control factors of meat supply chain were put forward, and the corresponding recommendations and improvements were listed. Finally, the model of RFID application to Xing Le Industrial Co. in Huizhou City was carried out. Examples show that the model and the analysis results are scientific and rational, and it have a strong foresight and guidance to control the risk factors of meat products supply chain.
