Aquatic product, which has much protein, a little fat and abundant nutrition, is one of the important sources that contain the animal protein. The processing of fish and fishery products (not including the fresh and iced aquatic products) has a long history in our country. The way varied, including refrigeration, surimi, marine alga, canned, dried product, concoct food, comprehensive utilization and so on. The processing of seafood not only enriches the local market of our country, but also is one of the main ways of exports. It has played the important role in the national economy.But the processing factory faces the problem that the level of the quality control is low. In recent years, the fact, which contain the excess of microorganism, the pollution of chemical pollutant, the addition of foreign body, the illegal use of additive and the use of unmatched label, has infinitely affected the reputation of the aquatic products processing industry and become the bottleneck that restrict the development of the industry. Analyzed carefully, it is found that the above problem could be avoided by control in the processing of aquatic food.The Good Manufacturing Practices (GMP) is a kind of independent management system which pays attention to the quantity and hygiene of processing and is a series of measure, method and technique through the whole processing to guarantee the food quality. It requires the factory have reasonable production and control method (Method), excellent production equipments (Machine), qualified employee (Man) and good material (Material) to prevent from inferior food and assure the quality of the product.This thesis compared the foreign advanced aquatic products GMP laws with the present food GMP laws, found out the latest development trends and the shortage of the present similar laws.
