Mulberry fruits contain a lot of anthocyanins pimnent,which has much health care efficacy such asenriching blood,diuresis and antioxidation.Mulberry anthocyanins was pay attention by scholars at homeand abroad because it has attractive color and not only was non-toxic but also has a variety ofDharmacology and health care efficacy Therefore.as a kind of natural pimnent.mulberry anthocyaninswilI be has a broad prospect ofapplication in field of food,cosmetics and pharmaceutical industry.Mulberry dried"fruits were materials in this test.It was studied in this paper that the best technical ofextraction with method of solvent,microwave—assisted and ultrasonic assisted.of purification withmacroporous adsorption resin and the stabilities ofmulberry pigment.The main results showed as FOllow:1 Mulberry pigment extraction technology optimization results were as follow:a Solvent extraction:0.01%HCl—70%ethanol as solvent.material/solvent ration was 1:15,extraction temperature was 702+C,extraction time was 90min,absorption value was 0.71.b Microwave·assisted extraction:O.OI%HCl70%ethan01 as solvent,material/solvent ration was 1:10,microwave power was 300W microwave treatmenttime was 120s.absorption value was O 833 c.Ultrasonic assisted extraction:0.01%HCl-70%ethanol ass01vent.material/solvent ration was 1:10,Ultrasonic power was 140W,ultrasonic treatment time was 45minabsorption value was 0.766.Comprehensive comparison of these methods of extraction,microwave assistedextraction method can significantly improve extract effect of mulberry pigments.followed by ultrasonicwave assisted extraction method,and finally solvent extraction method2.Purification technoloNcal conditions result of mulberry.pigments through macroporous adsorption resmwere as foilow:a.Comprehensive comparison adsorption and desorption performance of three kinds ofresin which was AB一8,HPD-400A and HPD一100.the results showed that the resin(AB一8)had good adsorption and desorption quantity,which was apt to used in mulberry pigment purification.b Results of static adsorption test showed that optimum adsorption condition by resin(AB一8)was:adsorption tnne1.5h.absorptiontemperaturefor 30Cextraction solvent pH 2 c.Results of static desorptiontest conditions showed that optimum desorption condition by resin(AB-8)was:desorption time 2.5 h.ethanol concentration of desorption fluid was 70%,desorption fluid pH 2.c Results of static desorption test showed that optimum desorption condition by resin(AB-8)was:desorption time 2.5h,ethanol concentration of desorption solvent was 70%,extraction solvent pH 23 Results ofmulberry pigment stability were as follow:a Solvent pH effect the color ofmulberry pigment·Mulberry pigment color was purple in pH 2 and was pink in pH 2.6~3.6 Mulberry pigment color changedfrom groundsto dark purplein pH4. 6-6. 6 andwaslight bluein pH7 6~8 b Temperature effect the stability of mulberry pigment very much Heating not only can damage mulberry Digment but also can accelerated destruction effect c.Vitamin C had certain influence on mulberry pigment whlch had Drotection effect and had certain hyperchromic effect.d.Metal ions had significant influence to muibe"pigment Mg2+,Mn2+。,Zn2+,Cu2+can increase absorption value of mulberry pigment significantly and had certain hyperchromic effect.Fe2+had certain effect on mulberry.,pigment and Na,A2+,K2+had no significant effect on mulberry pigment e Frozen environment had no significanI effect onmulberry.pigment f Light had significant influence oil mulberry pigment Lighting had destrllctlon etkcton stability of mulberry pigment...
