Kinmen Kaoliang liquor is loved by cross-strait people. It is difficult to distinguish between true and false liquor while many fakes are on the market at present. In this paper,with the liquor as the research object,authenticity identification technology of Kinmen Kaoliang liquor is studied using wine fingerprint established by the gas chromatography method, combined with chemometrics methods,such as the fingerprint similarity analysis,principal component analysis and cluster analysis. Main results are as follows:1.The optimization of the gas chromatograph conditions:column temperature 50°C(5 min), 4°C/ min to 200°C,injection port temperature 230°C,FID detector temperature 230°C,capillary column for LZP930,30 m×0.32 mm×1.0 μm,sample quantity 1 μL,diversion ratio spake 30:1.2.Collecting 55 batches of liquor samples,fingerprint similarity is obtained by using the included Angle cosine method,the 10 batches Kinmen Kaoliang liquor similarityare > 99.0%,the 10 batches of kaoliang liquor on the mainland and 10 batches of rice wine group similarity were > 98.0%;The Kinmen Kaoliang liquor,rice wine,wine,brandy similarity are between 10.0 ~ 70.0%,and that similarity analysis can be used to distinguish between different types of wine; And the same scent of Kinmen Kaoliang liquor and rice liquor on the mainland and Taiwan region kaoliang liquo’s similarity are around 88.0% on average,only by similarity analysis is difficult to distinguish between different brands kaoliang liquor,also combined with principal component analysis and cluster analysis,auxiliary judgment;In Kinmen Kaoliang liquor characteristic peak for the standard fingerprint similarity comparison to identify true and false wine,the results showed that 6 batches of kaoliang liquor and Kinmen Kaoliang liquor true wine similarity in 40.0 ~ 85.0%,can be judged to be fakes. 4 batch of kaoliang liquor and true wine similarity in 98.0%,by comparing the characteristic peak,four wine samples are lack of five true wine characteristic peak,suspected of fakes,combined with principal component analysis and cluster analysis,can be judged to be fakes.3.Using principal component analysis can distinguish different types of wine(Kinmen Kaoliang liquor,rice wine,wine),on the true and false identification of Kinmen Kaoliang liquor, principal component analysis can eliminate most basic fakes,the remaining individual confusing wine samples,need to be further combined with similarity analysis,clustering analysis and characteristic peak ratio to determine. In addition, Kinmen Kaoliang liquor and mainland kaoliang liquor get close scores on principal component analysis,lead to overlapping PCA projection drawing,so only using principal component analysis was not enough to distinguish between the same scent of wine.4.Using the cluster analysis can basically sort of liquor of different flavor types, can also distinguish true and false Kinmen Kaoliang liquor,also can distinguish the same scent of wine. If there is suspicious samples, It need to be combined with the characteristic peak can be distinguished in the alignment of judgement.5.With the standard Kinmen Kaoliang liquor fingerprint similarity analysis < 98.0% can be judged to be fakes. Use the principal component analysis and cluster analysis are obviously different from Kinmen Kaoliang liquor samples are judged to be fakes. Similarity in 98.0 ~ 99.0%,and the use of principal component analysis and cluster analysis can’t obvious difference of wine samples,requires a combination of three kinds of analysis results and compare whether they contain Kinmen Kaoliang liquor characteristic peak and so on to compare.
