In recent years, China’s food industry has developed rapidly, people’s living standards have markedly improved, the degree of prosperity and the ever-changing market, consumer concept matures, it becomes more and more autonomy. Faced with fierce market competition environment, modern food enterprise should be how to improve the acceptability of their products? And how accurate the average consumer to distinguish the authenticity of the merchandise before the fine assortment of it? From the technical point of view of food sensory evaluation of this analysis.This article is based on local food enterprises in Shanxi Province, focusing on the status and development prospects of applications in the food sensory evaluation techniques in the food industry in Shanxi Province, Taiyuan double by synthesis Food Co., Jing zhong Tian Sen in the kitchen, bakery company YUCI heart shore, Glamor Pingyao beef Group, Yuci Wei Shijie beverage company’s investigation, two companies from the consumer point of view, and expounded in the consumer food sensory evaluation techniques to identify the authenticity of the application status and traditional areas of the food industry in Shanxi Province and the existence of problems and prospects in the new field of application. Conclusions show:food sensory evaluation of the application of technology in the late start, the application time in Shanxi only ten years, although in recent years the rapid development, but because of their limited food enterprises in Shanxi conditions, sensory evaluation techniques the existence of the application level is not high, not broad range of applications and other issues at this stage, most of the employees have not been trained, sensory evaluation basically rely on the experience to stay in the evaluation stage. In this paper, the application of sensory evaluation techniques put forward new ideas and suggestions, and promoting business and consumer understanding and application of the technology.
