In the past thirty years since the reform and opining-up the catering trade of Yunnan province has experienced a rapid development and now is transforming into a modern service trade from a traditional manual service trade. A franework of diversified cooking styles has come into being with the popular low-priced catering as the pillar. The trade has played an importance role in stimulating domestic needs, promoting consumption, increasing jobs, improving people's living standard and pushing forward the development of relative industries such as agriculture and tourism. However, there still exist a lot of problems such as extensive development, incomplete trade norms, lack of talents and imbalanced reform impetus. There is still a gap between Yunnan province and the other province and cities as far as the development level is concerned. The most serious problems include small industrial scope, low concentration, lower standardization level and chained level than the average level of the whole western region. To push forward the transformation of the catering trade is an important way to stimulate domestic needs and increase jobs, and is crucial for Yunnan province to cope with the financial crisis, readjust the industrial structure and promote service industry .A thorough study of Yunnan's catering trade upgrading is of theoretical and realistic importance to speed up the industrialization of Yunnan's catering trade.This thesis studies the catering trade upgrading with relative industrial upgrading theories, based on former researches in this field at home and abroad. According to the characteristic of this trade, its upgrading is divided into internal structure upgrading and enterprise upgrading which is the microscopic industrial basis. Firstly, a study is conducted on the industrial level. The trade internal structure is studied with Shift-share Method and a two-dimension eomparison(the sectional data and time sequential data)is made between the trade internal structure of whole China and that of Yunnan province. Based on the studies, this thesis pats forward a rationalization trend of the trade's internal structure and conducts a quantitative comparison of its rationalization. Secondly, a study is made on the enterprise. The factor analysis and cluster analysis are conducted on the 70 enterprises selected as"The Best Enterprise and the Best Restaurants"in the first evaluation campaign of Yunnan province. Through a comparison of the results and the American catering giant KFC, the Japanese catering baron Yoshinoya and the famous enterprise Little Sheep, the difference is detected. The ways of Yunnan province catering trade upgrading are proposed as follow: the government take the guide which enterprises, break new paths, and FDI can be achieved by their common efforts.The innovation of this thesis is a study on industrial structure upgrading of a special industry, the catering trade. It is hoped that this initial study on the catering trade's upgrading of Yunnan province can provide a research mode for its catering trade as well as other service trades.
