Along with development of social economy, more and more attentions have been received in social status about service enterprises. The proportion of service enterprises in GDP enhances in some developed country, the proportion achieves above 50% in some developed countries. Our country service industry level also has enhanced, but the proportion is lower. It has analyzed the present situation of our country service enterprises, especially has summarized the development characteristic of traditional service enterprises. The fast development about social economy has huge impacted to the traditional service enterprises development. The characteristic of Service enterprises are the stronger individuality, the difficult standardization, the stronger service undulation and so on. In view of pressures, the service enterprise should have BPR.This thesis unifies the theory of BPR and the simulation method, and proposes the system and the method which can be fit for the BPR about service enterprise.According to the actual situation of service enterprise management and the procedure of BPR, this paper proposed a suited BPR procedure for the service enterprise. At the same time, this article applied the method of SA and Witness simulation software on the simulation optimization of the process, which has established the simplification simulation model of service process, used the computer simulation thought, obtained the existence question through analysis, used the optimized module for the optimization of this model, rejects the non(?)ssential non- increment link, enhanced the working efficiency ,and increased the profit; Used the theory of 6σinto the process of BPR, sought the union spots of BPR and 6σmanagement, used them in the quality control of BPR; Finally established the appraisal system of BPR in traditional service enterprise, and used the improvement the fuzzy synthesis appraisal method to chooses the plans, then take it on the actual applicationOn the basis of theory research, the paper analyzed one restaurant. According to the procedure of BPR, analyzed and reengineered the process of restaurant, redesigned the organizational structure, and evaluated the result at last.
