At the present time, HACCP has been provided with authoritative food safety quality management system all over the world. Its purpose is to eliminate the food safety harm which possibly occurs during the production process. This paper based on the basic concept, principle and content of HACCP and contraposed Jingjiang Shuangyu food Co.Ltd production truth, we analyzed harm in the production process and established 6 critical control points and applied HACCP system in the corporation with 7 princles of HACCP as well as references. HACCP plan list of the corporation was estabalished and kept running. Modification for HACCP system was also made with during the application of the system. Comparion of the quality of products in 2006 and 2007 indicated that HACCP system has very distinct postive effect on the quality of the products and it is simple and efficient to every production tache monitoring, which resulted of the quality of final products continually improved. In conclusion, HACCP applied in beef jerky production is in favor of insuring the final products safety, decreasing loss, reducing cost, enhancing economic benefit, and has further influence on meat corporations development.
