HACCP (Hazard Analysis Critical Control Point) is a significant system implied infood hazard Identification, assessment and control. HACCP has been considerabledevelopment since it has been introduced in China twenty years ago,.especially after2000.However, the process of the implementation in underdeveloped region is slow, especially insmall enterprises of Hechi. Base on the characteristics of food enterprises in Hechi, this paperanalyses the current situation and problems of implementation of HACCP in this area,propose specific methods of using HACCP principles in small-scale food enterprisessupervision.This paper uses literature research, field surveys, analytical reasoning and otherresearch methods. With Hechi, Guangxi Northwest Territories, for example, based onhistorical developments in the food industry and food safety control data through first-handinformation on the area of corporate governance and certification of food regulation hascollected, studied the food security situation in northwest Guangxi region and the status ofimplementation of HACCP, hoping to formulate relevant policies and measures for thespecific operating businesses and government to provide meaningful information. The firstchapter is the introduction, introduces the background and significance of this paper analyzesthe food security situation at home and abroad, by comparing the national food safetyregulatory model to analyze aspects of the regulatory system defects, and further leads to thefunctions of the State Food and Drug institutional reform of work in progress; secondchapter describes the progress of basic concepts and principles of HACCP, HACCP andapplication researches made of; Chapter III in Hechi, for example, the relevant regulatorydata based on the characteristics of the food enterprise development and food regulatoryconditions, analysis HACCP implementation constraints exist in Hechi in food businesses.The fourth chapter of the dissertation is summarized consolidated results above, the relevantpolicy proposals put forward feasible way to HACCP principles to Hechi small-scale foodproduction enterprise management.
