People have got much focused on food safety in recent years.Regulators have to face a more and more complicated environment for food safety,and need to find more scientific,systematic and efficient ways to manage it.As a relatively mature preventive management system applied in food safety,HACCP makes management more scientific,efficient and easy to operate,for HACCP's correction and verification procedure,and its systematism and continuity.The author analyzes China's regulatory environment,and summarizes the applications of HACCP at home and abroad.The author also tries to design more scientific,efficient and dynamic regulations on food safety,by bringing in principles and working methods of HACCP system,based on the research conducted in three dairy plants in Dali.The thesis does a literature review on HACCP,and analyzes its system.It designs a set of local regulations on food production,which has been applied in pilot plants in Dali.The thesis also tries to raise questions,proposes improvement measures and draw conclusions that work in the supervision of food production enterprises can be integrated with the principle of HACCP in the regulatory resources,improve the efficiency of supervision,streamline the train of thought.The research is expected to give regulators some thinking and methods to provide more scientific and efficient regulations or supervisions on food safety.
