The aim of this work was to synthesize Jujube Polysaccharide-Iron Complex(JPIC).In this paper,Jujube Polysaccharide-Iron Complex(JPIC) was obtained by the reaction of Jujube polysaccharide with ferric chloride under the alkaline condition.In respect that Jujube polysaccharide has biological activity and the ability to combine with metal ions,so JPIC will be a safe iron agent for the body.Firstly,two different synthesis of systematic were studied.It was to analyse the factors' effect on the reaction in the basis of single factor experiment,such as:sodium citrate,solvent, temperature,pH,sodium carbonate and the amount of ferric chloride.Then,by making the content of iron in JPIC,the best reaction condition was found according to the result of orthogonal test.Compared the two different synthesis processes,it was found that one of the processes is larger better than the other.The content of iron in JPIC is 28.3%by the method of UV.Secondly,physico-chemical property was studied in the paper.The results show that JPIC is a kind of water soluble polysaccharide iron complex and an excellent stability at the pH from 3 to 12.There is no free Fe3+ in the water soluble.And the study proved that Fe(Ⅲ) can be deoxidized to Fe(Ⅱ) which can be absorbed by body with the presence of ascorbic acid in 2.5h.Lastly,the structure was characterized by Ultraviolet-visible absorption spectra(UV), Infrared spectroscopy(IR) and Mossbauer Spectroscopy.The results show that the structure of the two kinds of JPIC that were obtained by the two different synthesis processes was the same structure.The two complexes have been found to have the structure ofβ-FeOOH and the complexing bonds which are hydroxide radical and carboxyl.And the stereoscopic structure is octahedron.The results of experiment suggest the employment of the complex in the oral treatment of iron deficiency anaemia or as supplement of iron in foods.
