As an important aspect of international cultural exchange, the exchange of food and cuisine culture between China and the West is related to people's ordinary life. The wonderful Chinese cuisine has been attracting more and more foreigners, so as the names of dishes which reflect Chinese cuisine culture. Since the dish name is the first impression given to a dining person when he or she decides to order a dish, a good translation of the dish name can not only convey accurate information, but also the Chinese cuisine culture to the customers. However, academic studies on translation of dish name are not given enough attention, especially the translation of cooking skill terms.This paper focuses on the semantic differences between Chinese and English cooking terms, as well as the translation of Chinese dish name. The writer starts the paper with analyzing the differences between Chinese and Western cuisine culture, sums up the cooking terms and gives detail analysis on glossemes in each semantic field. Then, the writer classifies the Chinese dish names according to their naming styles and analyzes the translation theories and principles that are suitable and gives the main translation methods-literary translation, free translation, explanation etc.The writer hopes that through the study of this paper, more and more attention will be given to the analysis on semantic differences between Chinese and Western cooking terms and the translation of Chinese dish name. Thus it can promote the circulation of Chinese cuisine culture.
