In recent years, with people's increasing awareness of health living and the repeated occurrence of food safety incident, such as sudanhong incident, the issue of food safety has become the focus of people's attention. At present, the enterprises which produce high-risk food have been required to set up HACCP system the world wide.The full name of HACCP system is food "hazard analysis critical control point system" . As an identification, evaluation and control system about the notable harm to food safety, it is the most authoritative food safety control system in the world.HACCP is a simple, reasonable, and highly professional food safety control system. The purpose of this system is to ensure that any existent or potential food safety problems in the food production system get under control, so that public health accidents could be prevented.This dissertation aims to provide references and inspiration to the related foodstuff enterprise through systematic HACCP theory introduction and the research of HACCP's good implementation in bama food processing Ltd., There is much hope that this dissertation could promote HACCP's implementation in our country which would decrease food safety incident like sudanhong and enhance customers trust in the food enterprises and their food quality.
