During the recent years, as one initial and essential element in six main tourism consumption factor, tourism food&berverage that is an important part of tourism product is rapidly developing in Yunnan. It is very pity that research on traditional national food&beverage products in domestic field goes behind real development. Based on previous studies, the author want to probe principle and approaches to put forward a creative design and planning. This study, following the principles of expand food culture of Yunnan, by using the methods of data collection, field survey, questionnaire survey and so on, proposed a new model of exploitation of food&berverage, and provided some scientific suggestions on the management and industry in Yunnan province. The paper suggested that the exploitation should adapt market change, deeply excavate tourism food culture resource by developing a series of special products to enhance the foundation, by exploiting a series of combining related products to increase the affixture value, by setting up industry policy and the attestation system, of guarantee and support.This paper consists of six parts:Main content of the first part is researching method and basis. Analyzing present condition and discussing the importance of the research, the author analyzed studying progress made by different scholars and gave a brief introduction about the basic frame of the article, including motivations, contents, methods, ideas and significances of research, to point definitely out studying purpose and assumptions by using the analyzing method of sociology.In the second part, the author provided a detailed description on the history of food&beverage in Yunnan which is base of whole studying.In the third part, after surveying and analyzing the spatial distribution of traditional food&beverage resource, the author evaluated food resource and discovered superior to traditional national food.In the fourth part, the author analyzed the supply and need of market by the way of questionnaire survey.The fifth part is the key part in which the author tends to make somebreakthroughs. On the guiding of theoretical research in the former part, the author put forward to the developing principles and basic thoughts, for example, products strategy , rational advice and the relevant supporting systems.In the last part, the author summarized the positive results and the problems remains for further research, and provided a brief prospect for development of food&beverage industry in the future.According to the author, there are two breakthroughs in this paper. Firstly, the article made a detailed analysis and evaluation about the existing resource of food&beverage in Yunnan. Secondly, based on resource and market survey, the author provided the developing model of "the product strategy + the relevant supporting industry + the attestation system".
