China is a large producer of aquaculture. Quality and safety of aquatic products relates not only consumers'health but also become the focus of social concern. Flounder abundant nutrient content, high protein, low fat, rich in vitamins and other characteristics of collagen so they are very popular. "Turbot fish event" occurred in 2006 makes consumers doubt the quality and safety of aquatic products and affects consumers'confidence. One of the ways to solve the current predicament is implementing origin traceability technology that let consumers understand consumption and prompt enterprises to strengthen self-discipline. This has an important practical significance of ensuring consumer health, improving the consumers'confidence of Flounder's quality and promoting the healthy development of the Flounder industry. Therefore, Flounder origin traceability system should be established to achieve the total quality control "from breeding to the table".Through material collection and research, the article summarizes the development and situation of Flounder industry, analyzes the main influence factors of Flounder's quality and safety during the breeding process, and then initially establishes the Flounder origin traceability system. The main research contents are the following four aspects:1,According to Flounder aquaculture supply chain,the article defines the basic framework and the key technology of Flounder traceability system.2,Establishment of Flounder traceability encoding system. According to EAN?UCC-the Global Identification System, the article establishes the coding method for Flounder traceability based on UCC/EAN-128 Bar Code by comparing UCC/EAN -13 to UCC/EAN-128, and using UCC/EAN-128 code to achieve a unique mark for every connection including cultivation,transport and sales. In addition, every Flounder has a sole traceability code. 3,Identification technology of Flounder traceability is established. According to Flounder farming process and the common way of cooking, through the immersion test, boiling test then choose to use PET material label, and print labels with resin ribbons. On this basis, the article compares methods of embedded in different parts (the back muscles, dorsal fin, caudal fin) with strapping the label on the fishtail, then record the number of fallen off tags and the injured fish. The results show that the rate of bar code information recognition accuracy can reach nearly 100% after the label soak in water 40 days, the abscission rate of labels embedded back muscles by 12mm plastic needle is less than 5%. The thesis establishes a labeling identification method, and every fish has its respective label.4,The realization of Flounder traceability system platform. Flounder traceability system platform bases on database technique and computer technology, it consists of production management system, supervision and administration system, traceable enquiry system. The fish breeding company can enter company information and Flounder information to the system, provide data support to traceability, consumers can receive exhaustive information by inputting traceability code on the net.Establishment of Flounder traceability system could achieve the total quality control, improve the work efficiency in Flounder quality and safety accident, and also strengthen the supervision and management of Flounder production. Enterprises to implement traceability system will be more efficient and have long-term market share, but also improve competitiveness of enterprises, and provide technical support for Flounder industry healthy development.
