Simultaneous Determination Of Water-soluble Vitamins In Food Samples And Development Of Relative Reference Materials

Vitamins are a structurally heterogeneous group of essential food constituents that are required in small amounts for normal growth and maintenance of human health. Different kinds of vitamin enriched products have been commercialized and the simultaneous determination of vitamins in those products is needed.In this thesis, the analytical methods for vitamins in milk powder and multivitamin tablets were investigated systematically by HPLC, LC-MS/MS and IDMS. The established methods provided strong technique support for the quality control of vitamins.Now the development of reference materials related to public health is a priority and interested all over the world. The reference materials in food field, especially vitamins of complex matrix are insufficient in our country. The project in this thesis developed series of reference materials for vitamins control in food and related products. The vitamins in reference materials were determined by high performance liquid chromatography(HPLC) and liquid chromatography isotope dilution mass spectrometry (LC/IDMS). According to criterion of the national first class standard reference material research technology, the homogeneity, stability and uncertainty were investigated respectively. The results showed that the uniformity of the reference materials were satisfactory. The one-year stability inspection of the reference materials showed that the prepared methods were suitable to be applied as national first class standard reference materials. These reference materials can also provide a technical support and value traceability assurance for the measurement and research of dietetics.
