Take Agaricus bisporus as the test material, study an edible coating preservation method that suitable for Agaricus bisporus. A composite coating of carrageenan-konjac glucomannan with nano titanium dioxide was obtained after a series of tests, the quality and shelf-life of Agaricus bisporus can be effectively maintained and extended.Firstly, the carrageenan, sodium carboxymethyl cellulose (CMC) and their complex solution coating preservation effects during storage were determined by experiment, and carrageenan was determine as the matrix material. The PPO activity, respiration rate and membrane permeability can effectively inhibited, and hardness and L*can be significantly maintained by carrageenan coating. The shelf-life of Agaricus bisporus can be extended to12days by carrageenan coating.Thirdly, the nano-titanium dioxide was added to the composite coating to make it with antibacterial properties. The dispersion of the titanium dioxide nano-particles in the composite film was observed with a scanning electron microscope, and the best dosage is0.1%. The permeability, water permeability, tensile strength and tensile rates of the composite coating with nano-titanium dioxide were determined, the results were as follows:28.8MPa,10.4%,762.45g/m2·24h,323×10-6cm3/m2· d· Pa,16.9×106cm3/m2· d· Pa.Finally, the preservation effect of the composite film on Agaricus bisporus was verified by experiments. The results showed that the shelf-life of Agaricus bisporus can be extened by the composite coating to more than13days.
