This article briefly introduces the current situation and development trend of commercial induction cooker. Meanwhile, it introduces the operation principle of induction cooker, and explains the control scheme selection of commercial induction cooker. It specially aimed at the temperature measurement scheme of commercial induction cooker and discussed it in detail, and introduced the basic principle of infrared thermometry and digital temperature measurement. This article analyzed the temperature measurement scheme used for commercial induction cooker and proposed a new temperature measuring algorithm. The hardware and software using in the control scheme designed for commercial induction cooker were analyzed, debugged and tested, in order to affirm the feasibility of the scheme. The control scheme of commercial induction cooker researched in this article achieved to control the measurement error of middle and high temperature zone between plus or minus 4℃, which is superior to the current mainstream of commercial induction cooker.In addition, based on the current the control scheme of commercial induction cooker, this paper also proposed a new feasible temperature expiation scheme aiming at different pots, which has been debugged and validated by the experiments.
