In this paper, we focus on studying the technology of fermentation for detoxification and hydrolysis for amino acids. Rapeseed meal was used as the experimental material in this text. Solid-state fermentation of ordinary rapeseed meal with single strain and multi–strains with lactic acid bacteria, Aspergillus oryzae, Aspergillus niger and Candida utilis was carried out. Through selecting the best strains and optimizing its technological conditions. Experimental results show that Aspergillus niger inoculated with lactobacillus at a ratio of 0.5:1(V:V), the fermentation temperature is 30℃,the volume of sugar is 3% of rapeseed meal, the initial pH is natural, inoculum size is 8% of rapeseed meal, the detoxification rate reached to 92.12% for only 4 days.In the basis of multi–strains and solid-state fermentation for detoxification, we study the detoxification,enzymatic hydrolysis and low level acid hydrolysis integration to produce amino acids. Also take the rapeseed meal as the material. First, solid-state fermentation of ordinary rapeseed meal with singles train and multi–strains with lactic acid bacteria, aspergillus oryzae, aspergillus niger were carried. Then, using the prolease which was producing during the mixed fermentation to enzymatic hydrolysis, the contents of amino acids could be reached 1.15g/mL during enzymatic hydrolysis at 55℃for 7h. At last, introducing a proper quantity of hydrochloric acid to acid hydrolysis at 95℃for 8h, the contents amino acids could be reached 2.17g/mL. This paper described preparation of compound amino acids from rapeseed meal. As it take the advantage of detoxification, enzymatic hydrolysis and acid hydrolysis, so this technology was not only characterized low energy consumption and high yield rate but also various amino acids. These complex amino acids which produced by this process could be not only used as food additive, soy sauce brewing,but also amino acid health food. This research provided a new comprehensive method to utilize rapeseed meal.
