Soft pear not only flavor was beautiful, and nutrition value was rich, it had many effects. The main component of soft pear were determined in the topic, for soft pear component analysis. And provided basis through orthogonal experiment optimization in soft pear of main chemical compositions, so as to determine the best extraction conditions and raised its main ingredients for soft pear extraction. It provided theoretical basis and data support for the production practice of soft pear related products. And using local resources in Qinghai, developed and utilized the soft pear related products. It started a new way for the development and utilization of soft pear resources, and provided practical and feasible route for the economic development of soft pear in Qinghai.The results of the study were as follows.1. Total protein contents were determined in soft pear fruit and juice. The results showed that the total protein content was 0.151g/100g in soft pear fruit, the total protein content was 1.63g/100mL in soft pear juice. The content of amino acid were determined in soft pear fruit, its content was 0.0237g/100g. Through the chromogenic reation for qualitative testing of soft pear, results showed that soft pear had flavonoids. The content of flavonoids were 0.0189% in fruit and 0.01739g/100mL in juice. Through the color precipitation reaction, results showed that soft pear had alkaloids.The content of alkaloids were 0.0272% in soft pear. K,Fe,Mg,Ca,Cu,Zn,Mn seven kinds of trace metal elements were determined in soft pear fruit and juice. By measuring result, the contents of K,Fe,Mg,Ca four elements were higher in juice, were respectively 19566.67ug/g,4220ug/g,8313.33ug/g,91193.33ug/g. The contents of Fe,Ca two elements were higher in fruit, were respectively 560ug/g,13180 ug/g, The contents of Cu,Zn,Mn four elements were relatively low. The total sugar content were determined in soft pear. The result showed that the total sugar content were 7.8093g/100g in fruit and 10.8663g/100mL in juice.2. Through the orthogonal experiment optimized extraction conditions of main ingredients in soft pear. The optimum extraction conditions of protein in soft pear as fllows:the ratio of the pollen weight and solvent volume was 1:25(g/mL), the extraction liquid value was 10, extraction time was 69 minutes, extraction temperature was 40℃. The optimum extraction conditions of alkaloids in soft pear as fllows:the ethanol concentration was 75%, the ethanol addition amount was 90mL, extraction time was 3 hours, extraction temperature was 80 C.3. Using soft pear juice for the development of soft pear drink. Through the experiment optimized production process of soft pear juice as follows:the additive amount of soft pear juice was 40%, the additive amount of citric acid was 0.07%, the additive amount of sugar was 7.5%, the additive amount of xylitol was 4.0%. Using soft pear juice producted soft pear drinks, it had unique style of soft pear and refreshing.
