This thesis is based on "food security situation and the countermeasure in Hubei Province " the soft csience of Hubei Province key project, combined with the research supervisor, food production in Hubei province carry out specific research areas, analyzes food enterprises in Hubei Province Exist in production safety, and then analyzes the reasons for security problems arising and to propose appropriate solutions and recommendations.In this thesis, a questionnaire survey, empirical research, literature research and other methods are used to conduct research. The main job of the three specific research. (1) conduct research on 11 medium-sized food enterprises in Hubei Province, mainly in aquatic products, dairy products and meat processing enterprises as the main research object. Including Zhongxiang, Jingzhou, Ezhou, Xiantao, Qianjiang, etc; (2) develop a questionnaire about the consumer's attitude in some supermarkets in Wuhan, mainly in Hankou, Wuchang and Hanyang, including five large supermarkets as the main survey; (3) supermarkets (mainly near the Evergreen Garden, Wuhan) for the circulation of some food labels and instructions on the investigation, including 13 kinds of products, a total of 12 food companies, mainly aquatic products, cooked meat products, some milk products and so on..Through the research, we found that the main problems of food companies in production in Hubei Province are: food and raw material procurement channels are not standardized; food production enterprises self-controlled condition is not ideal; individual food businesses for food appearance, unauthorized use, or excessive use.The amount of use of food brighteners, preservatives, coloring and spices, but has not been marked on the packaging to add a certain food additives, food enterprises in the production process is not strictly in accordance with the HACCP system for production and food corporate quality and safety supervision and inspection means perfect.Based on the analysis in the investigation, according to the actual situation of food enterprises in Hubei Province, proposing a solution in the food industry production about food safety recommendations and opinions. As follows:1. Using HACCP systems of all production processes aspects to ensure the safety of food production.2. Ensuring the quality and safety from the source gateway.3. Establish a sound legal system for food safety.4. Food enterprises have to enforce the law strictly in the production process.5. Strengthening education and training of food employees.6. Strengthening food safety monitoring technology innovation and enhance the intensity of the supervision and management.
