This paper optimized the extraction of Maca polysaccharides, and compared the extraction rate, purity and monosaccharide composition of Maca polysaccharides between different varieties of Maca. The main conclusions of this paper are as follows:1. The best extraction process of Maca fresh root polysaccharides by the shaped ultrasonic equipment is:Temperature:80℃, Solid-liquid rate:1:20,Time:30min, the extraction rate of Maca polysaccharides is5.80%.2. The best extraction process of Maca dry root polysaccharides by the shaped ultrasonic equipment is:Temperature:60℃, Time:50min, Solid-liquid rate:1:30, grinding degree:100mesh, ultrasonic power:1000W, ultrasonography and gap rate:1.4/0.6, the extraction rate of Maca polysaccharides is15.26%.3. The best extraction process of Maca dry root polysaccharides by the proliferation ultrasonic equipment is:Temperature:70℃, Time:10min, Solid-liquid rate:1:25, grinding degree:100mesh, ultrasonic power:200W, the extraction rate of Maca polysaccharides is13.25%4. The extraction rate, purity and monosaccharide composition of Maca polysaccharides varies between different varieties of Maca, and the extraction rate and purity of Maca whose root bark is black and red and root flesh is white is the highest.
