Research objective : Use Maca as the main raw material Study on the optimum extraction process of Maca polysaccharide and use Maca polysaccharide to make nutritious Maca sports drinks.Study on the processing technology of Maca polysaccharide sports drinks.This research provides basis for the deep processing of Maca beverage.The way of polysaccharide Extraction Technology From Maca: Use the way of water extract and alcohol precipitate,Through the single factor experiment and response surface analysis of Maca polysaccharide extraction rate at 70 degrees,solid-liquid ratio is 1:20.6,extraction time of 1.42 hours when the highest extraction rate was 45.92%.Study of Maca polysaccharide beverage formula: make Maca polysaccharide sports drink by mixing a certain.Study on the processing of Maca polysaccharide sports drinks,response surface optimization and sensory evaluation to determine the best prescription of Maca polysaccharide sports drinks.The results show that Maca polysaccharide solution 21.3%,sugar0.6%,citric acid 0.015%,the ratio of the Maca polysaccharide sports drink the best quality.
