It is important to determinate drug residues and additives dose in the process of farm products. High performance liquid chromatography tandem mass spectrometry technique (HPLC-MS/MS) has become one of the major tools in food detection. Honey and milk powder were objects of our study. Our research targets were development rapid determination of drug residues in honey at trace level and additives dose in milk powder, respectively. The details are as follows:The first part is about the situation of food safety and relevant detection methods. And the basic principle, characteristics and development of HPLC-MS/MS and its application on in food detection were summarized.Secondly, a HPLC-MS/MS method was developed for the rapid and simple determination of CAP in honey at trace level and D5-CAP as internal standard was used for quantification. The calibration curve was linear over the range of0.10ng/mL~20.00ng/mL and the linearity was good. The limit of quantitation was0.025μg/kg. The established method was rapid and efficient.Thirdly, a multi-residue method suitable for confirmation and determination of6kinds drugs in honey was validated. The detection limits and method quantitation limits were2.0μg/kg. These values are far lower than the maximum residue limits established by several control authorities.Lastly, a high sensitive method for determination of sodium saccharin in milk powder by HPLC-MS/MS was developed and validated. The correlation coefficient of the calibration curve was good, in the range of0.01~10.00mg/L. The limit of detection was5ng/mL, the limit of quantification was0.1mg/kg. The method can be used to monitor effectively the content of sodium saccharin in milk powder.
