In this thesis, the effect of postharvest treatment with different concentrations(0,30,60,90μL/L) of NO on moisture content, weight loss ratio, deployment rate,firmness,TSS content,Vc content, MDA content, breathing intensity, ethylene release rate,browning degree and the activities of the enzyme PPO and POD of agaricus bisporus afterpostharvest at (10±0.5)℃had been studied.The results of study showed that:(1) Exogenous NO could delay the loss of moisture content, weight loss ratio,deployment rate,firmness TSS content and Vc content,retard the increase of browning degree,keep agaricus bisporus quality in a cetain degree. It indicated that nitric oxide had goodkeeping fresh actionantistaling for agaricus bisporus. And60μL/L NO was the best treatment.(2) Exogenous NO could significantly reduce the breath degree and the ethylene releaserate,delay ethylene release peak appearing time for2days. When the concentration of nitricoxide is60μL/L, the best treatment appears.In contrast to CK,60μL/L NO decreased thebreath degree for22.6%.Further more, it delayed the ethylene release rate for49.8%.(3) Exogenous NO could restrain the activities of the enzyme PPO8.90%~33.13%,enhance the activities of the enzyme POD for28%~76.27%, inhibit the rise of MDAcontent,delaying the senescence of agaricus bisporus,and prolong the shelf period efficientlyfor2days. And60μL/L NO was the best treatment..
