Mushrooms(Agaricus bisporus) are a commercial production of a rich nutrition, the cultivation of edible fungi, and welcomed by the consumers because of its unique taste. Through the study of Agaricus bisporus on mechanical properties and change rules, which can provide a theoretical basis for reducing mechanical damage. In addition, the brownness, hardness, water content, total soluble solids and protein content of Agaricus bisporus has a great impact on the flavor and taste, and seriously affect the Agaricus bisporus storage quality in storage and transportation process, so it is urgent to carry out research on storage quality mechanical properties and mechanical damage for Agaricus bisporus.In this paper, through a series of experiments of mechanics and chemistry experiments, the main research contents and conclusions are as follows:1.The effects of loads on storage quality of Agaricus bisporus (brightness, hardness, soluble solid content, cell membrane permeability, PPO activity, POD activity, respiratory intensity) were researched. by using Matlab analysis software, the storage quality of Agaricus bisporus and loads models were established.2.Balancing tests and impacting tests were tested on similar to the weight (30g ± 5g), diameter range of 35mm-45mm of Agaricus bisporus, results showed that the impact is not significant factors influencing the storage quality of Agaricus bisporus, but storage time and falling height are significant factors.3.Using TMS-2000 texture analyzer, on the whole and part (pileus, stipe) of Agaricus bisporus compression tests were operated. The basic mechanical parameters of Agaricus bisporus was obtained, and it could be thought the as anisotropic material.4.Using TMS-2000 texture analyzer, the Agaricus bisporus were compressed in vertically and horizontally and mechanical parameters were determined. The mechanical behavior of Agaricus bisporus under compression load was analyzed by the finite element analysis software ANSYS10.0. The stress distribution of Agaricus bisporus under compression load were gotten and the damage mechanism of Agaricus bisporus was obtained.5.Through the Agaricus bisporus storage test, effects of temperature, the different diameter size and storage time on the mechanical properties were tested. The experimental data were analyzed by use of SPSS statistical software determining the factors (time, temperature, maturity) compression have significant effects on Agaricus bisporus performance.6.Based on the BP neural network and using Matlab software, the relationship between the mechanical properties and storage quality of Agaricus bisporus was established. It could predict the storage quality and mechanical properties, improve the detection quality of Agaricus bisporus.
