| The systematic study on the modified atmosphere storage and logistics technology ofsweet cherry is based on Hongdeng as materials. At the same time, quality managementsystem HACCP was combined into the entire preservation storage and transportationprocess to determine the hazard analysis critical control points, and to develop appropriatepreventive measures to ensure the quality of sweet cherry storage. The result show that thequality of maturity Ⅱ is superior to maturity Ⅰand Ⅲ, for this reason, maturity Ⅱ issuitable for cold storage.Firstly, changes in total soluble solids (TSS) content, titrable acidity (TA), texture andother physical and chemical indicators of sweet cherry with three different maturitydegrees were studied during cold storage to explore the effects on storage quality ofdifferent harvest maturity of sweet cherry, ultimately to determine the most appropriatestorage harvest maturity.Secondly, the cherries were stored with ordinary cold storage, pull mouth refrigerationand MAP refrigerated methods respectively. Based on the changes in the physical andchemical quality indicators of sweet cherry, we can compare preservation results of thesethree storage methods and evaluate the effect of MA storage. The results show that theMAP can significantly prolong the shelf life of sweet cherry, physiological and qualityindicatores of the cherries changed slowly.Finally, we combine HACCP system with MA storage of sweet cherry and logisticstechnology and conduct hazard analysis in each link of MA storage and transport of sweetcherry. Determining the critical control points, critical limits and critical control measuresto establish a sound scientific quality assurance system so that it can improve the qualityof sweet cherry in MA storage and transportation process. |
