Simmental was widely distributed, divided into milk type, meat type, bothmilk and meat type. Chinese Simmental is a large milk and meat type. In our study,we determinated the growth traits, fattening traits, carcass traits and meat quality traitof Chinese Simmental. Based on the above four types of traits, we received a total of260Simmental trait performance data, and for using gene engineering method forscreening and meat quality traits related to functional genes and genome-wideassociation, established gene polymerization method of breeding and marker assistedselection provides basic. At the same time, it can also solve encountered in fatteningbeef production efficiency, high grade beef production and it can provide technicalbasis.Citrate Synthase(CS)is one of the three key members of the tricarboxylic acidcycle metabolic pathways. CS plays a regulatory role in energy metabolism,biosynthesis and other related major life activity of organism. CS exist widely invarious organisms, it is a variety of important intracellular metabolic pathways of keyenzymes. CS catalyzes the condensation reaction between the oxaloacetate and acetylcoenzyme A, generate citric acid and coenzyme A. The study of CS before is focus onplants, especially tobacco and rape. And there is less research of CS in animal andfungal aspect. CS gene isolated and cloned from yeast encodes479amino acids forthe first time, referred to as Sscip. The CS gene cloned from porcine encoded464amino acids, referred to as Pscip. The cloning of CS gene in chicken has not beenreported, but it crystal structure of433amino acids has been studied in detail andelaborate. There are less reports about the relationship between CS gene and animalproduction. This experiment was conducted to study the genetic polymorphism of CS exon3and association between the polymorphism of CS and meat performance inSimmental cows. The PCR-RFLP method was applied to study the geneticpolymorphism of CS exon3in95Simmental cows. And then the genetic correlationsbetween genotypes and performances were obtained by SPSS. The results showed thatthere were3genotypes in Aor13HI, AA, AB and BB. The results indicated that thegenetic polymorphisms significantly correlated with Simmental. For fat color, AAgenotype was higher than BB genotype (P<0.05). These results indicated that AA isthe predominant genotype in Chinese Holstein cows.And we may use this results helpthe early seed selection on Simmental cows, improve the meat quality.
