The aim of the study was to determine the effect of Pediococcus pentosaceus on the growthperformance and meat quality of broiler chicken. A total of210AA chicks were randomly dividedinto7treatments (30for each treatment). The experiment was completely randomized trialdesigned of single factor. The birds in the control group were fed the basal diet whereas in othertreatment groups basal diet was supplemented with109cfu (4-6w),1010cfu (4-6w),1011cfu (4-6w),109cfu (1-6w),1010cfu (1-6w) and1011cfu (1-6w), and the experiment lasted for42days.The test results show that:(1) Growth performance: For4-6weeks broiler, feed weight ratio of group1011cfu (4-6w),109cfu (1-6w) and1010cfu (1-6w) was significantly lower compared with control group (p<0.05);for1-6weeks broiler, feed weight ratio of1010cfu (1-6w) group was significantly lower than thecontrol group (p<0.05). Slaughter performance: For6weeks broiler, the abdominal fat rate of109cfu (4-6w) group was significantly lower than the control group (p<0.05); breast muscle rate of109cfu (1-6w) group and1010cfu (1-6w) group was significantly higher than that of control group(p<0.05).(2) Meat quality:①pH value: For3weeks broiler,24h pH muscle of109cfu (1-6w) groupafter slaughter was significantly higher compared with control group (p<0.05); for3weeks broiler,breast pH of1010cfu (1-6w)6week group was higher than that of control group (p<0.05), legmuscle pH of1010cfu (4-6w) was higher than that of control group (p<0.05). Shear forces: For3weeks broiler, breast muscle, leg muscle shear stress of test group have no significant differencecompared with the control group(p>0.05); For6weeks broiler, shear force of breast muscle of1010cfu (1-6w) group of was significantly lower than the control group (p<0.05).②water holdingcapacity: For3weeks broiler, breast muscle, leg muscle water holding capacity of eachexperimental group are lower than those of the control group; For6weeks broiler, muscle waterholding capacity of109cfu (4-6w) and1010cfu (1-6w) is higher than that of control group.③f leshcolor: For3weeks broiler, leg muscle L*of1010cfu (1-6w) group was significantly lowerthan that of the control group (p<0.05); For6weeks broiler, breast muscle, leg muscle L*values of109cfu (4-6w) and1010cfu (1-6w) group were significantly lower than those in the control group(p<0.05), leg muscle a*values of1010cfu (1-6w) groupwas significantly higher compared with thecontrol group (p<0.05), breast muscle b*values of109cfu (4-6w) group was significantly lower compared with the control group(p<0.05).Routine nutritional composition of muscle: For3weeks broiler, crude fat of breast muscle,leg muscle of on109cfu (1-6w),1010cfu (1-6w) group were significantly lower than those in thecontrol group (p<0.05); For6weeks broiler, leg muscle crude protein of109cfu (4-6w),1010cfu(1-6w) group of was significantly higher than that in control group (p<0.05); crude fat of breastmuscle, leg muscle109cfu (4-6w),1010cfu (1-6w) group were significantly lower than those in thecontrol group (p<0.05).(3) Serum biochemistry: For3weeks broiler, HDL-C, LDL-C and TG of test group comparedwith the control group, the difference was not significant (p>0.05); CHOL of test group wassignificantly lower than the control group(p<0.05). For6weeks broiler, LDL-C of109cfu(1-6w)group was significantly lower than the control group (p<0.05); TG of1010cfu (4-6w) and1010cfu(1-6w)group decreased significantly (p<0.05);1-6weeks feeding Pediococcus Pentosaceustreatment group lower than in the control group (p<0.05).Liver biochemistry: For3weeks broiler, TG of the test group were lower than the controlgroup (p>0.05); CHOL of109cfu (1-6w) and1010cfu (1-6w) group were significantly lower thancontrol group (p<0.05); For6weeks broiler, except for1011cfu (4-6w) group, TG of test groupwere significantly lower than those in the control group (p<0.05); CHOL of the test groupsignificantly lower than the control group (p<0.05).(4)Antioxidant index: For3weeks broiler, the test group T-SOD has increasing trend (p>0.05),serum and liver MDA of1010cfu (1-6w) group was significantly lower compared with the controlgroup (p<0.05). For6weeks broiler, liver of T-SOD of109cfu (4-6w),1010cfu (1-6w) group washigher than that of control group (p<0.05); leg muscle of T-SOD of1010cfu (1-6w) group washigher compared with the control group (p<0.05); breast MDA of1010cfu (1-6w) group wassignificantly lower than the control group (p<0.05).The above results show that, Pediococcus pentosaceus with improvement on AA meat qualityof broilers.1010cfu (1-6w) dose is better than other dose on all of broiler chicken.
