Halothane gene is one of major genes which were firstly discovered having the effects on pork quality because its Halnn is easy to produce PSS which leads to form PSE pork. In this study, Halothane genes in 61 boars and 1572 breeding sow were tested on the main breeding pig farm in Fengqiao Town, Jiaxing City. The incidence of PSE pork in 110,547 commercial pigs of Zhejiang Zhongfa Meat Product Factory was calculated, and from 433 samples of pork of three-way cross combinations, the halothane gene’s effects on the incidence of PSE pork forming was analysed, the results were as follow:(1) During September 2008 to April 2009, 10 Landrace, 24 Duroc, 27 Large-Yorkshire, 1472 Landrace×Yorkshire breeding sow, 44 Yorkshire×Landrace breeding sow, 56 Landrace×Jiaxing breeding sow were taken halothane genetic testing by PCR-RFLP technique on the main breeding pig farm of Fengqiao Town, Jiaxing City. Only 5 Landrace×Yorkshire breeding sow have Halnn, and others don’t have it. Haln frequency is 0% in Landrace, 4.17% in Duroc, 1.85% in Large-Yorkshire, 6.76% in Landrace×Yorkshire breeding sow, 3.41% in Yorkshire×Landrace breeding sow, 0.89% Landrace×Jiaxing breeding sow. These results prove the theoretical basis of making good usage of genetic technology to improve the quality of pork for all breeding pig farms in Fengqiao Town.(2) In April 2009, Halothane genes in 433 samples of pork of three-way cross in Zhejiang Zhongfa Meat Product Factory tested were calculated. The result showed that 385 pigs are HalNN pigs, 46 pigs HalNn pigs, 2 pigs Halnn pigs. The incidence of PSE pork in the halothane gene pigs was that 2.34% in HalNN pigs, 4.35% in HalNn pigs, 100% in Halnn pigs. This experiment showed that the Halothane gene is one of major factors having affecting the PSE pork’s forming, but not the only factor. So the meat product factory can reduce the PSE pork’s forming through strengthening management before slaughter, optimizing the slaughtering process, adding anti-stress drugs and improving the quality of staff.(3) During May 2009 and September 2009, the incidence of the PSE pork’s forming in 110,547 sample pork Of Zhejiang Zhongfa Meat Product Factory was calculated, 3.25% in three-way cross combinations, 0.57% in three-way cross combinations of local breeds, an overall average of 3.11%. These results show that bringing in local pig breeds can reduce the PSK pork’s forming.
