The French spinach nutritional components were analysised in its three pickingperiods. The results showed that the French spinach were in rich crude fat, crude protein,crude fiber, Vc and mineral elements K, Ca, Na, Mg, Zn, Fe, Cu, Mn in different pickingperiods; The types of amino acid reached17and The essential anino acids were rich inthe three picking periods,The contents of nitrate and nitrite increased with the change ofpicking periods, But the contents weren’t over standard, then they accorded with thevegetable’s standard.Microwave and ultrasonic were used to research extraction process ofpolysaccharide from French spinach. Four factors were chosen based on single factorexperiment, response surface method optimization of three levels were processed by theDesign-expert response surface. Obtained the optimal parameters of the microwave andultrasonic extraction, The microwave extraction was better than ultrasonic extraction bycomparison.Macroporous resin adsorption and PEG/NaH2PO4aqueous two-phase system wereused to Purificate polysaccharide from Frech spinach, The best process parameters ofseparation and purification was identified. The structure of the French spinachpolysaccharide was conducted a preliminary analysis by thin layer chromatography andinfrared spectrum.The clearance ability of DPPH, hudroxyl free radical, superoxide anion and nitrite,was determinated and compared with Vc, The results showed that the clearance abilty offree radicals and nitrite were enhanced with the increased of concentration of Frenchspinach polysaccharide, The clearance effects was worse than the same concentration ofVc.
