In recent years some illegal food producers and business operators overdose illicit drugs, didn’t comply with the relevant national laws and regulations.Food safety incidents occured frequently, at the same time China’s food safety incidents have been frequently reported.The issue of food safety has attracted wide attention, which also sounded the alarm for the management personnel of food safety in our country. Reports have pointed out that people often have sulfa drug residues in animal food, can cause the sulfa drugs gradually accumulate in body, its harm mainly for teratogenicity, mutageniciyy, carcinogenicity. The food of China’s exports has repeatedly happended sulfonamide exceed the standard events in abroad,which not only causes serious losses to the economy of our country,but also damaged the reputation of Chinese products in the international market.Development of sulfa drug risk assessment has the vital significance to the scientific analysis and evaluation of sulfa drug safety,make effective sulfa drug safety management measures and the international food trade smoothly.According to the basic steps of risk assessment:hazard identification, hazard characterization, exposure assessment and risk described to evaluate the risk of sulfa drug in chickens. The sampling site were chosen wholesale market, farmers markets and large supermarket in Guangdong.And according to the methoed GB/T20759-2006"Method for the determination of sixteen sulfonamide residues inlivestock and poultry muscles—LC-MS-MS method" for testing, gain the residue data and detection limit, combined with poultry consumption data of all kinds of people, gain exposure of risk factors in the crowd. Exposure levels will be compared with reference standard of security, will determine whether or not adverse effect to human body health. The exposure of the sulfonamides residues in chicken formula can use EDIC=∑(Ri· Fi). Risk description can use the IFSC=EDI/SIC x bw. The result show that the sample sulfonamide detection rate was15%, Sulfamonomethoxine detection rate was4%,Sulfaquinoxaline detection rate was7%, Sulfamethazine detection rate was2%, Sulfadiazine detection rate was4%. The recovery rate was82.0%-97.1%.From the point of safety index, the result is far less than1, the impact on the city of guangdong province chicken security risk in an acceptable range, Didn’t had to in the process of risk management.
