Looking at research status at home and abroad, we can find that in the filed of artificial intelligence and food engineering, nobody studies building ontology-based strain fermentation knowledge base which possesses function of intelligent reasoning, combined with strain fermentation technology and ontology knowledge base. The purpose of this study is to build a strain fermentation ontology knowledge base with function of intelligent reasoning, combined with knowledge of ontology knowledge base and strain fermentation. This study provides references to building a shared, reusable knowledge base for experts in field of food science and fills the blank of ontology research combined with food science and artificial intelligence, with a certain innovation. Strain fermentation ontology knowledge base can help researchers do semantic query and mechanism analysis on information of strain fermentation, assisting researcher to make reasoning. This research will promote the application and development of ontology in fields of information retrieval, food expert system and food science education system. Main contents in this paper are as follows:1.We present a construction method of building ontology of strain fermentation by studying existing ontology design principles and reference software engineering ideas.2.Building ontology of strain fermentation filed. This research presents the ontology structure, core concepts, examples and their inter-relationship of strain fermentation, realizing unification of concept terminology in the field of strain fermentation. So that words and phrases commonly recognized in strain fermentation field could be established, the common understanding to strain fermentation knowledge is deepen, and the related knowledge is standardized.3.Establishing SWRL reasoning rule of strain fermentation ontology, according to reasoning needs in strain fermentation field. The SWRL parser achieved the format conversion from OWL ontology and SWRL rule to fact base and rule base of Jess expert system.4.Realizing application of fermentation ontology reasoning. The established SWRL rule could be applied to specific examples, forverify correctness of this rule.
